Violation: 416.1, 416.4(b)

Citation: At approximately 0830 hours while performing scheduled ISP code 06D01 in the retail processing area I observed the following deficiencies. There is an accumulation of dead insects in the overhead translucent light covers. There is an accumulation of dried meat and fat particles on the ceiling above the ban saw. The wall mounted enclosure over the chicken table has an accumulation of dirt and debris on the inside surface area. The electrical panel contained inside is rusty. There is an accumulation of dead insects in the overhead light fixtures in the grinding room adjacent to the retail cutting area. A check of the daily SSOP records found that these deficiencies were not documented. No tag applied. No product directly affected at this time. This is a violation of FSIS regulations 416.1 and 416.4(b). I informed Mr. orally and in writing with this NR of the noncompliance.

Regulation:

 416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
