Violation: 416.2(d), 416.4(d)

Citation: At approximately 0730 hours while walking through the cooler he following 01C02 violation was noted. In the carcass cooler on the shelf on the left wall were 3 lugs of various unidentified ground and not ground meat with no covers. They were under the condenser with moisture droplet visible though non were observed dropping into the lugs at the time. This is a violation of the afore mentioned regulation which states:" 416.4 (d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.416.2(d). Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided. " A review of available plant records indicate no action had been taken on this deviation. I attached retain tag #B35 688358,B36 688319 and B35 688330 to the lugs and informed Mr. of the violation. A review of the noncompliance file indicate no similar violation in the past 60 days.

Regulation:

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
