Citation: On Tuesday, August 30, 2011 at approximately 07:30 hours, IPP performed preoperational sanitation inspection after the plant had completed their preoperational inspection tasks and documentation. The following noncompliances were observed: 1. IPP observed a fat residue build up on the carcass scale located near the door to the retail area. This is a non direct product site. 2. IPP observed fat residue build up on the under side to the handle of the viscera cart and the bottom side of the viscera cart. The cart was cleaned and sanitized immediately. No tag was applied. This is a non direct product contact site. was shown the noncompliance and this document serves as written notification of the failure to meet 9CFR 416.1 which states "Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated." And 9 CFR 416.4(b) which states "Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product."
