Citation: During the FSA conducted by FSIS EIAO, Mr. which began on August 08, 2011, the following noncompliance was observed: a review of the plants Slaughter Hazard Analysis determined that the plant management fails to accurately support the "Hot Carcass Wash". All three articles support "Hot Carcass Wash", the 1st utilizes a Chad Cabinet, (commercial wash cabinet), that the plant does not use, the 2nd targets indicator organisms and not specifically E. coli 0157:H7 and the 3rd will reduce enteric organisms and again not specifically E. coli 0157:H7. This does not meet the regulatory requirements of 9 CFR 417.5 (a)(2) which states "[redacted]"The establishment shall maintain the following records documenting the establishment's HACCP plan: The written HACCP plan, including decision-making documents associated with the selection and development of CCP's and critical limits, and documents supporting both the monitoring and verification procedures selected and the frequency of those procedures."
