Citation: On 05/16/2012 at 1045 hours while performing a Zero Tolerance Task at the pre-chill inspection station after the final wash I randomly selected 10 chickens from the evisceration line.  On one carcass I found a 2” by 4” area of contamination which was green, semi-solid consistency, and met the regulatory definition of fecal material.  I informed Mr. (Manager), and showed him the noncompliance.  The bird was removed from production and washed with chlorinated water.  Plant manager verbally informed me that they would increase the final wash nozzle pressure.  Ten minutes later a second 10 bird zero tolerance check was performed and the product was in compliance.  This finding constitutes a deviation from the critical limit of no visible fecal contamination at CCP 1 and is in violation of 9 CFR 381.65(e) which states in part “Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.”


381.65(e) Air chilling. In air chilling readyto- cook poultry, the internal temperature of the carcasses shall be reduced to 40 F. or less within 16 hours.
