Citation: On this day, Thursday, July 8, 2010, at approximately 1745 hours in room 2141 ( Bacon Slicing) while performing ISP code 06D01, I observed the following Facilities noncompliance. I observed approximately 5 white overhead pipes ( Refrigeration ) that were covered on the top of the pipes with Black residue build up and dust. The pipes were approximately 5 to 8 feet long, and were directly over exposed product area's I immediately informed Mr. Lead of Bacon Slicing. This noncompliance creates an unsanitary condition, and is in violation of the Meat and Poultry regulations 416.4(b) and 416.4(d). The overhead cleaning program for the Est. is on the Master Sanitation schedule and room 2141 was scheduled for cleaning the weekend of Friday July 2, 2010. This document serves as written notification of a facilities noncompliance.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
