Citation: On Thursday, July 22, 2010, at approximately 1745 hours, I observed the following conditions in room 1700. As I entered room 1700 from the back end of hallway #1130 where they package case ready meats, from the spiral freezer and directly off of the fresh pork boning line, I observed the packaging line which is directly next to the wall that separates room 1700 from Hallway # 1130 backed up with cryovaced product everywhere off the line, Boxes were filled and the Plant employee's had no where to go with the product, so they were throwing product on the platform where they were standing, I observed one employee actually walking on the packaged product laying on the platform. In one spot the steps leading to the platform was covered with the packaged product approximately 6 to 8 inches deep. I immediately took regulatory control, I could not find any green hats ( Plant Management) so I instructed the line employee's on the fresh pork boning line to stop their line until the packaging end could get the affected product off the floor and steps of the platform. I continued to search for anybody from plant management, it took approximately 15 minutes to find someone and try to eliminate the product from falling on the floor. Q.A. Technician came into the room and instructed Plant Management to put all Product that was on the floor and steps of the Platform into a grey Vat to be reconditioned, and then put the grey Vat under Q.A. hold. Production Supervisor, Mr. came into the room and I informed him of the Action I had taken, and verbally inform him of the pending NR that I was going to issue because of this noncompliance. This noncompliance is in violation of the Meat and Poultry regulations 416.1 and 416.4(d). This document serves as written notification of a Facilities noncompliance / Product based.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
