Citation: At approximately 0220 hours in the morning of Wednesday, August 11, 2010, while traveling through Hallway ( room 1130 ) near room 1700 ( fresh Pork boning ) I observed 2 grey vats in the clean Vat area in the following unsanitary condition. Both of the tall grey vats used in room 1700 for Pork loins were deeply nicked and the surface of the inside was slimy to the touch, also the odor coming from the inside of these two Vats was a very strong sour smell. I immediately rejected the vats by attaching USDA reject tags to the two vats. Reject tag numbers were B18 774235 and B18 774207. I then informed Mr. Production Supervisor of smoked Meats. This noncompliance is in violation of the Meat and Poultry regulation 416.3(a). and this document serves as written notification of a Facilities / product based noncompliance.

Regulation:

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
