Violation: 416.13(c), 416.4(d)

Citation: At approximately 2019 hrs on 10/28/10, I observed the following non-compliance while performing a scheduled 01C02 in room 2335 (Ham boning.) There was a discarded glove in a grey edible vat of inner shank meat. Additional inner shank meat was being deposited in the vat by conveyor. At some point in the future, it was clear that the additional meat would have completely covered the glove. This is direct product contamination. The meat was tagged with US Retained tag B34738943. I immediately informed Ham Boning Supervisor of this noncompliance and my regulatory control action. Through my conversation with Mr. I also determined that this cut of meat is typically chopped or ground in this establishment. Plant personnel elected to spray the meat with lactic acid and search the vat for additional foreign material. I released regulatory control over the product as soon was this was completed. The establishment has failed to meet the requirements of 9 CFR 416.13(c) and 416.4(d) as well as the plant's own SSOP (section 3.2) signed 9/3/10. The operational sanitation records show no relevant deficiencies in room 2335.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
