Violation: 416.13(c), 416.2(d), 416.4(d)

Citation: At approximately 1947 hrs on 11/17/10, while conducting an 01C02 (operational sanitation) procedure in room 2265 (Smokes Houses), I observed the following noncompliance. Upon entering room 2265, I noticed some steam on one side of the room. Upon closer inspection, a patch of condensation near smokehouse 16 was dripping on a rack with sixteen raw "German Brand Bologna" chubs. I immediately tagged the rack with US Retained Tag B39414780. I, also, immediately alerted Smokehouse 2nd Shift Team Lead, of my actions and of the noncompliance. I determined that condensation had not made contact with four chubs on one side of the rack. The four unaffected chubs were moved to another rack. The plastic casings of the twelve affected chubs were rinsed with potable water. Lactic acid was applied to the surface of the casings. These chubs were then moved to a clean rack. This is a violation of 9CFR416.13(c), 416.2(d) and 416.4(d) as well as section 3.2 of the plant's own SSOP plan (last signed 9/3/10). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action. 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
