Citation: On this day, Monday, March 13, 2011, at approximately 1900 hrs, while performing SSOP operational Sanitation verification checks in room 2141 (Bacon Slicing), I observed the following noncompliance's. There were numerous white overhead pipes that were covered with a dark residual build up on the top of those pipes. A vast majority of these pipes with the residual build up on were over areas of exposed product. this same type of residual build up was also observed around the Refrigeration Units, on the sides and the ceiling above these units. I further observed one of these refrigeration units had a bright Pink colored residual build up on the outside of the coils. I also observed overhead areas (ceiling) were there was a thick, heavy concentration ( build-up) of a black colored residual build-up. This was mainly observed at the seams where the plastic strip covers the seam. these areas were also above exposed product. I informed Mr. Production Supervisor of Bacon Slicing, 2nd shift of the above noncompliance's. These noncompliance's are in violation of the Meat and Poultry regulations 416.4(b) and 416.4(d). This document serves as written documentation of a Facilities noncompliance.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
