Citation: At approximately 2119 hours, while performing pre-operational sanitation verification task after the establishment pre-operational sanitation verification was completed and prior the start of operations the following noncompliance was observed in room 2300(RTE PACKAGING). I observed product particles on three different sections of the blue conveyor belt (line [redacted] support frame and two of the gear wheels of the aforementioned belt (entity number 8767). The particles covered an area that range from two inches to four inches long by one inch wide in size and the particles color ranged from off white to brownish. I also observed three pieces of mesh with meat piece attached to it, located between the gears wheels of the white conveyor belt of line [redacted] The mesh pieces were approximately two inches long by two inches wide in size and the mesh were off white in color and the pieces of meat were pink and brown in color. While continuing with my inspection I observed product pieces and residue on Slic sprayer balance weight. Some of the product residue had a dry appearance and cover approximately 20 percent of the weight surface. I also observed pieces of meat and packaging inside the motor engine of the white conveyor belt that transfer product from line [redacted] to the Crayovac machine. I immediately informed and showed to (Packaging RTE Supervisor) and Lead) of the noncompliance. I didn’t applied a US. Rejected/Retained tag since all the aforementioned affected equipments were cleaned and sanitize in my presence. All the affected equipment were non contact surfaces but were under or at a close proximity of the product contact surfaces. After I reviewed the Pre-operational record for room 2300 before I started my pre-operational inspection, didn’t showed any of the deficiencies described in this noncompliance record. This is a failure to comply with regulatory requirement 9CFR 416.13(c) and 416.4(b).
416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
