Citation: While touring Est. 791, I was performing the Sanitation Performace Standards verification. I chose to observe the establishment facilities in the product production areas. My findings were :[newline] Room 2147 -Old Bacon Press room - door 26 has broken edges exposing the interior of the door.[newline] -door 28 (side facing the bacon blast) has rusty handles one is square and one above it is circular. The door frame to this door, at the opening for the rail has broken chemlite with exposed interior. [newline] In the Smokehouse area there is a door frame going from the smokehouse to the Old Ham Boning room, this frame is chipping and exposing the interior surface of the frame. [newline]No control action nor tags were applied as these surfaces are not product contact and no product adulteration was observed. The condition of the doors and frames stated is resulting in uncleanable surfaces. Dr. was given verbal notification of the stated noncompliance. This is written notification of facilities noncompliance. The requirements of the Meat and Poultry Regulations 416.1, 416.2b1, and 416.4d were not met. [newline]

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

 416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
