Citation: At approximately 1325 hours I was touring Est. 791 performing the task of Operational Sanitation verification and entered room 2060. This is the Frank rework cooler. I observed a gray bin of rework franks with a loose covering of plastic and on the plastic were 2 puddles of water each about 2 inches in diameter with one draining to the the side of the plastic going into the product under it. I immediately retained the product by taking regulatory control action and retained the product with USDA tag number B 31 837209. The product retained was rework and identified with a in house label - product number 6175 SMK TEM-T Hot LA20 from 8/13/2011. The weight was identified on it as 629 pounds. The product was stored under cooling unit 3B which has a white foam drain pipe that was visibly dripping onto the product and causing the puddling on the plastic. I notified the Area Lead - verbally of my findings. I later reviewed the operational sanitation records for the day and found no documentation of the above stated noncompliance. This is written notification of Operational Sanitation monitoring noncompliance. The requirements of Est. 791 SSOP were not met nor were the requirements of the Meat and Poultry Regulation 416.4d met.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
