Citation: At approximately 1805 hours in room 2335 (Ham Boning) I observed the following noncompliances. The Production Line was just coming back from their break, when I observed a Knife Sterilizer was overflowing into the drain located on the Platform. The drain was apparently clogged and the water from the sterilizer was filling the drain until it was overflowing the drain unto Product and Product contact surfaces. under the paltform there was an incline conveyor that was in place collecting Pork Shanks into white edible tubs for further processing. I observed the water from the drain overflowing and pouring over this conveyor, at the time of my observation, the conveyor was running and there was a white Tub of Pork Shanks which contained 59 lbs of Product, exposed at the discharge end of the conveyor where water was dripping from the Belt into the Tub. I retained the Pork shanks with USDA retain tag # B39034744 I also rejected the Incline conveyor with USDA reject Tag # B39034744. I also observed water from the Drain dripping into a edible grey Vat which contained 189 lbs of whole Hams, I also retained the Hams, and Plant Management decided to recondition these in my presence. I informed Mr. Plant Management representative for this room of the above noncompliances. I re-inspected the Incline conveyor after it was recleaned and sanitized and released it back into Production.

Regulation:

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
