Citation: At approximately 2118 hours, in room 2309, between the end of Pre-Operational Sanitation and the beginning of Production, I observed 2 Vats of Raw Pork for further processing were covered with green plastic bags to protect the product from any adulteration during the clean up process. I observed these 2 plastic bags contained numerious holes running the whole length of the vat, I further observed both of the vats contained Liquid on the outside of the Plastic. Upon further investigation I observed liquid that has gotten into the Product. I took immeadiate regulatory control by attaching a USDA retain tag # B4118892 to the 590 lbs of raw meat for further processing, I then informed Mr. of the above noncompliance.


416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
