Citation: At approximately 1738 hours in the Frank RTE Packaging room I observed the following noncompliance: While performing operation sanitation review and observation, while located in between packaging line # [redacted] & [redacted] I observed a production Employee at the incline feed conveyor for packaging line # [redacted] apparently some of the Franks came through the system with the casings still attached to the cooked Frank causing a back up of product on the incline conveyor. I observed the above mentioned Production employee pull the long strands of cooked Franks from the hopper as he was pulling the long connected links the bottom 3 links were in contact with the floor, I further observed the same Employee take the strands of connected Franks over to the Peeling Table and throw them on top of other Franks that were on the Table, i then observed the Peeler operator run the Possible contaminated Franks through the Peeler unto the Incline conveyor. I immediately instructed the Production Lead People to stop the Peeling operation and the incline conveyor to prevent the affected Product from expanding further in the Production line. I rejected the # 1 Peeling table and peeler and the incline conveyor, The Plant elected to put the affected product from the incline conveyor into Inedible. Production then recleaned the Peeling table, Peeler and incline conveyor, I reinspected and released. I informed Mr. Production Supervisor of Hot Dog Production, of the above noncompliance and the pending noncompliance record.


416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
