Citation: December 1, 2011at 11:30 I was performing part of (Standard Sanitation Operating Procedure) while performing this operational sanitation inspection, in cooler 2195, rewark area; I also verify adequacy and effectiveness of other consumer protection of product standard of identifying. During the verification of product identity standard, I observed the following noncompliance, I observed about three stainless steel buggies off no identification on the product, product is located under shelf in the left side of the room, next to the wall. I took regulatory control action by applying U.S. Reject / Retain tag. I took regulatory control action by tagging the two boxes. Tag # B 39581655 and Tag # B39581654. Mr. Technical Service, Food Safety Supervisor was notified of the noncompliance of the retention of unidentified off product and unidentified emulsiffied products. Plant failure to meet the Meat and Poultry Regulations 317.1 and CFR 416.4(d) which states: Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments. Establishment also failed to follow their Standard Operation Procedure on Rework Standard operating Procedure SOP #: Sop-00-00090. Last Revised Date 03/30/2011. In addition, a similar noncompliance was observed onNovember 19,2011 Plant Management's further planned actions for noncompliance record #MXL0423112217 N/1 Preventive measured states “ Training session properly covered and labeling vats of meats , a warness meeting were held with smoke team members responsible for covering and inspecting vats. Operationa management and FSQA are reviewing the current bag used to cover the vat. Thicker bags are in test phase to replace the current bag to improve product protection. Testing will be completed with in next 60 days.” Noncomplance was issued on November 11/18/2011, Record # MXL 3808112019N /1. Preventiove measure states “The team member who placed the vat in the cooler was disciplined for not following proper procdure (covering and labeling all products in storage.) All team members from both shifts in the smoked meats department will be retained on the importance of proper covering and labeling product when it is not used.” were ineffective in preventing today's similar noncompliance.
