Citation: At approximately 2035 hours, in room 2149 ( Belly injection ) after Plant Management performed their verification of Pre-Operational Inspection and Prior to the start of Production, the room was released to me . I observed the following noncompliance: Inside the Wolf - Tec Injector, Equipment # 32310 there are 4 white hoses that run from the injector directly into the block that feeds the injector Needles. The white Hoses are approximatley 30 inches long. While performing Pre-Operational Sanitation inspection, I requested that one of the hoses be taken off. When hose was loosen there came a dark yellowish Liquid pouring out of the Hose. I requested that the other three hoses be taken off for inspection. the other three hoses contained approximately 1 Pint each of the yellowish, unidentified liquid. I rejected the Injector and notified Mr. Production Supervisor for Bacon Injection/Press. This noncompliance is noncompliant with the Establishments written SSOP plan, dated 1/13/2012, on page 5, under heading 2.2 Pre-Operational SSOP Inspection, number # 3, which states: " [redacted]."

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
