Citation: On 3/29/2012 at approximately 1:45 AM while performing operational sanitation inspection the following SPS (Sanitation Performance Standard) noncompliance was observed: In room 2250, beaded condensation was observed on underneath surface of the stainless steel drip pan under the overhead cooling unit next to the elevator. Several racks of liverwurst were directly underneath the area where the beaded condensation was located.  No dripping was observed and no product affected at this time. The condensation was along both bottem edges of the drip pan and covered an area approximately 2 to 3 feet on either edge. [newline] QA technician was notified of the insanitary conditions in an RTE area and of the failure to meet Section 416.2 (d) of the Meat and Poultry Regulations which states: Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided. The establishment also failed to meet the requirements of section 416.1 which states: Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. A review of the establishment operational sanitation SSOP inspection form for Room 2250 indicated the room was last checked at 2350 hrs and the room was acceptable.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
