Citation: Today 04/19/2012 approximately at 07:45 hours, after the establishment performed pre-operation sanitation inspection and prior to the start of production, I performed the verification component of pre-operational inspection for adequacy and effectiveness of the plant's SSOP procedures for preventing direct contamination. I observed the following product contact surface non-compliances in RTE rooms 2155 & 2160. [newline]Room 2160 (frank peeling) a peeling feeder pipe had product residue lining the entire length of the interior of the pipe.[newline]Room 2155 ( frank packing ) packing machine 1 and 2 had several pieces of meat and fat measuring up to 1/2 inch in size on the segregation conveyors (diagonal conveyors).[newline]These are all product contact surfaces and a potential food safety hazard. I reviewed the SSOP records for the rooms in question and found no mention of these deficiencies. Mr. , the area supervisor was notified of this non-compliance and failure to comply with regulatory requirements of the 9 CFR 416.13, 416.4(a). I reviewed the establishment's SSOP plan revised: 1/13/12 which states on pg. 3 under equipment & cleaning: [newline]"2.[redacted] ."[newline]This noncompliance serves as a written notification of a monitoring no-compliance.
416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
