Citation: Today 06/20/2012 at approximately 6:20 hours, after the establishment performed pre-operation inspection for adequacy and effectiveness of the plant’s SSOP procedures for preventing direct contamination. I observed the following product contact surface non-compliance in the fresh pork injection room, room 1230.[newline]Several unidentified black particles were seen measuring up to 1 inch in length and ½ in width on the product belt of the 1037 conveyor, equipment ID#30078, (this is a white product conveyor belt approximately 12 ft long that carries product from room 1225 to room 1230). Mr. area supervisor was notified immediately. The area was immediately washed and sanitized by establishment personnel. This is a product contact surface and a food safety hazard. I reviewed the SSOP records for the rooms in question and found no mention of this deficiency. Mr. area supervisor was notified verbally and in writing of this non-compliance and failure to comply with 9 CFR 416.13, 416.4(a). I reviewed the establishment’s SSOP plan revised: 01/13/12 which states on pg. 3, [redacted].” [newline]This non-compliance serves as written notification of a monitoring non-compliance.
416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
