Violation: 416.13(c), 416.4(a), 416.4(b)

Citation: At approximately 0840 hours while performing an 01B02 procedure I observed the following non-compliances: 1. The plastic product movers, a food contact site, on the conveyor belt between the picker and transfer table were all cracked at the junction between the horizontal piece and the upright piece. Product from previous days' production could be observed in these cracks. Regulatory control tag, tag number B35460679, was applied to the conveyor belt. 2. The upper, square metal portion of the shackles had cobwebs, product from previous days' production, and rust. There were beads of water on these metal pieces. Product is placed directly beneath these areas. I reviewed the establishment's pre-operational records and noted that the plant performed pre-operational inspection and found the area acceptable at 8:21. The establishment took immediate action and cleaned the area; therefore, no regulatory control action was taken. 3. The fan in the corner of the evisceration room, directly above the door, had a layer of dust on the entire surface of the safety cage. The fan above the chiller had dust on the entire surface of the safety cage. 4. While the chill tank was being filled, I noticed numerous black specs floating in the water. Mr. was notified and emptied and recleaned and sanitized the tank. I checked the establishment's pre-operational paper and noticed that the tank was found acceptable at 8:30. Mr. was verbally notified of the non-compliances. The establishment is not complying with 9CFR 416.4(b), 416.4(a), and 416.13(c).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
