Citation: On Wednesday, 12-22-10 at 0900 while performing operational sanitation the following noncompliance was observed. There is penetrating rust around the frame work of the doorway leading from the eviscerating room to the picking room. The doorway mentioned is not a product contact surface or a product flow area. This will be documented as a facility noncompliance task code 06D01 under the following Meat & Poultry regulations: 416.2 (b) (1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. Mr. [redacted] plant manager, was notified of the finding.
