Citation: At 0735 Hr. Dr. [redacted] PHV brought to my attention a non-compliance in the packing room. I observed in this department, plant personnel placing exposed raw chickens in to 3 product boxes which were located on the product table, several exposed chickens were on this same table and against the outside of the product boxes. I notified Leslie, Department Supervisor and [redacted] Plant manager of this non-compliance at 0740 Hr. I applied US Retain Tag No. B34 802800 to the products that were against the outside of these boxes. The plant has not monitored or followed it's SSOP. At 0745 Hr. while observing the box making area off the loading dock Dr. [redacted] and myself observed 1 skid of exposed/unmade boxes stored next to a stack of wooden pallets. These exposed boxes had wood splinters on the inside side of the boxes. The plant also had several unmade boxes and lids stored against the bottom of wooden pallets and one wooden pallet leaning against a pallet of exposed/unmade boxing. The exposed boxing is used for poultry products as immediate product containers. The plant has not protected it's product containers from contamination. The plant is in violation of 9 CFR 416.13(c) and 416.4(d).


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
