Citation: At approximately 0645 hrs. after plants pre-operational sanitation and prior to the start of operations, while performing O1B02, I observed the following 1. In the kill floor department , the scalder had excess amount of product residue from previous days kill floating thru-out the unit. 2. In the hall way to the evisceration department the wall behind the aprons that were to be used for production that day had blood and product residue on different areas of the wall. the aprons were hanging directly against the wall. 3. In the evisceration department in a small gray tote, the black stoppers that are used to plug the tanks for holding birds to be chilled had product residue on some of the stoppers. 4. In the cut - up department the wall holding the aprons, used for production have two holes on the one panel. I took regulatory control action by informing Ms. [redacted] QC of the noncompliance's. When sanitary conditions were restored regulatory control action was relinquished. The plant is not meeting 9 CFR 416.13(c) & 416.3(a). Past Similar NRs - Previous Ineffective Plant Actions: NR# 0048-2010-15253 is unanswered at this time NR: 48-2010 dated 9/29/2010


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
