Violation: 416.13(c), 416.3(a)

Citation: At approximately 0650 hr. after plant's pre-operational sanitation and prior to start of operations, while performing an O1B02 pre-operational sanitation I observed at the hallway where the employees hang there white aprons, ( for production in the evisceration department). The wall behind the aprons had product residue adhered to it in different areas and of different sizes. the aprons that were hanging directly against the wall had blood spots and product residue on them from previous day production .While entering the evisceration department I observed the foot bath had numerous feathers and pieces of product residue of various size from previous days production. I immediately informed Ms. [redacted] Q. C.of the non compliances. Ms. [redacted] instructed the plant employees to take immediate corrective action therefore no further regulatory control was needed. The plant is not meeting 9 CFR 416.13(c) & 416.3(a). Past Similar NRs - Previous Ineffective Plant Actions: N R # 0056-2010-17310 was not answered at this time. NR: 56-2010 dated 10/20/2010


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
