Citation: At approximately 0715 hrs, after the start of production in the cutting department, I observed an employee hit his plastic sleeves (that were to be worn for production) up against the wall at the entrance of the department. after he was done hitting the wall ,the one sleeve fell on the floor, the employee pick up the sleeve and was going to put it on his arm and start to work. At the same time two employees were passing a water hose under the table. The hose was drug on the floor, under the table, when it reached the other side of table, a plant employee picked it up and hung it on the table that was being used for production. The same employee pick up the same hose that had been on the floor and was ready to use it to spray turkeys that were in a tank ready for cutup. I immediately informed Mr. [redacted] & Mr. [redacted] of the non compliance. Mr. [redacted] & Mr. [redacted] took immediate corrective action so no further regulatory control was needed. The plant is not meeting 9 CFR 416.4 (d) & 416.6 (a).


416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

416.5(a) Cleanliness. All persons working in contact with product, food-contact surfaces, and product-packaging materials must adhere to hygienic practices while on duty to prevent adulteration of product and the creation of insanitary conditions.
