Citation: At approximately 1015 hours, while walking through the cut-up room, I observed a 48 ounce plastic Chapin spray bottle that was unlabeled on the table that holds the circular blade. This spray bottle had about 20 ounces of an unknown liquid in it. As I was asking an employee what was in the bottle, I observed through the partially open door between the cut-up room and the packaging room, another employee using a similar spray bottle. I entered that room and observed an employee spraying a liquid substance onto the product contact table in the packaging room. This 48 ounce Chapin spray bottle was also unlabeled and was about one third full of some unknown liquid. I placed a regulatory control tag on this bottle, tag number B28047919; a regulatory control tag on the spray bottle in the cut-up room, tag number B34802908; and a tag on the packaging room, tag number B21738263. I then verbally informed Mr. [redacted] HACCP manager, and Ms. [redacted] QC of the non-compliance. The establishment is not complying with 9CFR 416.4(c) and 416.13(b).


416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOPís at the frequencies specified.

416.4(c) Cleaning compounds, sanitizing agents, processing aids, and other chemicals used by an establishment must be safe and effective under the conditions of use. Such chemicals must be used, handled, and stored in a manner that will not adulterate product or create insanitary conditions. Documentation substantiating the safety of a chemicalís use in a food processing environment must be available to FSIS inspection program employees for review.
