Citation: At approximately 09:15 while walking through the product cooler with FLS Dr. [redacted] we observed a gray Edible barrel with parts from the Salvage Table from yesterdays production. The barrel was half full of red tinged water. I then requested from the Establishment their protocol for water retention on poultry parts sitting in the cooler overnight in water.They could not produce the documentation. They have a Protocol for water retention in whole Cornish Hens but no protocols for other products. Product was retained with US-Retain Tag-NO.B28047896 until the Establishment has support for their retain water statement on their labels. The Establishment is not complying with 9-CFR-441.10 (which is further explained in Directive 6700.1 for Retain Water in Raw Meat and Poultry Product.)


441.10(a) Raw livestock and poultry carcasses and parts will not be permitted to retain water resulting from postevisceration processing unless the establishment preparing those carcasses and parts demonstrates to FSIS, with data collected in accordance with a written protocol, that any water retained in the carcasses or parts is an unavoidable consequence of the process used to meet applicable food safety requirements.
