Citation: In the HACCP Plan summary Raw Not ground packaging CCP1B the monitoring and frequency states; [redacted]. At 1640 hour I observed the QC person perform the hourly temperature check. The QC person stuck the thermometer into the bulk box of Turkey DBS Thighs and recorded the temperature of [redacted] degrees on the product packaging log form 082. The QC person is taking the temperature at the frequency of once per hour, but did not select five [5] pieces of product at random and record the highest temperature as stated in CCP1B. At 1650 [redacted] Plant Manager was verbally notified of the noncompliance and took corrective action(s).


381.65(a) Operations and procedures involving the processing, other handling, or storing of any poultry product must be strictly in accord with clean and sanitary practices and must be conducted in a manner that will result in sanitary processing, proper inspection, and the production of poultry and poultry products that are not adulterated.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits
