Citation: At approximately 1320 hours Line Inspector [redacted] was at the Inspection station waiting for chicken to come (there was a gap in the line where there were no chickens). Line Inspector [redacted] saw water start to dip from the ceiling tile above the Inspection station (he had stepped away from the Inspection station) water was also dripping from the tiles above the presentation area. Mr. [redacted] stopped the line. I (CSI [redacted]) walked into the room to give Mr. [redacted] his last break. I watched while the area was wiped down, the evisceration area was then rinsed and sanitized. No product was in the area at the time of the dripping water so No Retain tag needed to be applied as I remained in the area until sanitary conditions had been restored. This establishment is not following 9CFR 416.2(b) and 416.4(a).


416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
