Citation: At approximately 09:48 while performing an unscheduled 01C02(operational sanitation) I found the following non-compliances: 1.There was condensation on the ceiling directly above the Giblet table. [redacted] was notified immediately and corrective action was taken.There was no product involved. 2.On the North wall of the evisceration department there are 6in.by 6in.square double glass windows.Several of the windows have black mold between the two glass panes.One of the windows has standing stagnant water with debris from the outside floating around on the top.Thease windows are directly next to the Giblet table. 3.The metal plate that is attached to the wall under the windows has black mold across the top. 4.There is a yellow pole in the evisceration room,directly in front of the sliding door to the packing room that has rust and peeling paint. 5.There is black mold along the metal strip to the right of the sliding door that leads to the packing room. 6.In the packing room to the metal around the door has been pulled away from the wall. 7.In the finished product cooler the Chem. light is tore off the wall to the right of the door leading to the Dock area. 8.To the left of the sliding door leading into the Tray Pack area there is rusty water running down the wall. 9.Inside the finished product cooler to the right of the sliding door that leads to the Packing area there is a hole in the Chem. light approximately 1 1/2 inches long by 1/2 inch wide.


416.2(b) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
