Violation: 381.1_Adulterated, 381.65(a)

Citation: At approximately 1100 hrs. while performing a fecal test on turkey carcasses (with the necks placed inside), I observed that approximately 8 out of 10 of the turkey necks had several specs of black/brown ufm ranging in size from 1/2 mmx1/2mm or less and up to 2mmx2mm in size. This ufm was located on the small end of the neck from which the head would have been removed. I retained the turkey bins with tag #B34802551, B34802552, B34802553, and B34802554. I informed Mr. [redacted] QA of this issue. Regulations 381.1 and 381.65(a) were not met.

Regulation:

381.1 Adulterated. ‘‘Adulterated’’ applies to any poultry product under one or more of the following circumstances: (i) If it bears or contains any poisonous or deleterious substance which may render it injurious to health; but in case the substance is not an added substance, such article shall not be considered adulterated under this clause if the quantity of such substance in or on such article does not ordinarily render it injurious to health;

381.65(a) Operations and procedures involving the processing, other handling, or storing of any poultry product must be strictly in accord with clean and sanitary practices and must be conducted in a manner that will result in sanitary processing, proper inspection, and the production of poultry and poultry products that are not adulterated.
