Violation: 416.3(a), 416.4(a), 416.4(d)

Citation: At approximately 0635 hours, while walking throughout establishment 01015-P, I observed the turkey salt conveyor belt had black grease covering approximately 6" section on the entire belt. The belt was immediately stopped and Ms. (Chicken Salt Line Leader) was notified. No USDA tag was applied to the belt, as I remained in the area until the belt was recleaned and resanitized. There was approximately 15 minutes of down time. If product would have been allowed to continue through the process, it would have resulted in product adulteration or contamination. This is a violation of 9 CFR 416.3(a), 416.4(a), 416.4(d), as well as your own SSOP plan, SSOP # 2. Past Similar NRs - Previous Ineffective Plant Actions: Replacing two of the rollers under the belt did not prevent the black grease from being deposited on the belt. NR: 18-2010 dated 6/29/2010 This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
