Establishment No.: p1015

USDA Inspection Report: 14 Sep 2010

Code: 03J01
Violation: 381.65(e), 417.4(a)(2)(ii)

Citation: At approximately 0632 hours, I performed a zero tolerance fecal check on turkey evisceration line past the final washer and fecal scrubber and prior to the turkey carcass entering the turkey soaker. Performance of this check is part of procedure 03J01. I randomly selected ten carcasses from the evisceration line and inspected them for visible fecal contamination. I observed fecal on the inside of three carcasses in the left leaf fat area. It was light brown in color and ranged from a speck to 1/2 inch in length. (Dr. also observed and will verify the fecal on the second carcass). Since there were no employees between me and the turkey soaker when I performed this check, it is reasonable to assume the contaminated bird would have entered the turkey soaker in violation of regulation 381.65 (e). I immediately notified Mr. (Turkey Evisceration Supervisor), and Mr. ( First Processing Superintendent) of the noncompliance. This is a direct violation of 9 CFR 417.4(a)(2)(ii), 381.65(e), as well as the plant's own HACCP plan, Turkey Slaughter CCP#1. Past Similar NRs - Previous Ineffective Plant Actions: Have not received answer from plant. NR: 30-2010 dated 9/13/2010 This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.4(a)(2)(ii) Direct observations of monitoring activities and corrective actions;
