Violation: 416.1, 416.4(b)

Citation: At approximately 0326 while performing pre-operational sanitation, I found the following SPS noncompliance:[newline]The wolfking in 2nd processing had a putrid odor emitting from the motor area. I had the sanitation employee lift the motor cover so I could observe this area of concern. Nothing was in eyesight that would cause this odor. At that point I informed Ms. (QA), that I would be tagging the unit until the area of the odor could be found and eliminated. I used tag #B19169304 at 0326 hour. Upon further examination/cleaning by the sanitation employee, he found that a seal was deteriorating and product residue was packed in this area from operating/cleaning. at this point after cleaning throughly and talking with Mr. (Plant Manager), I removed my tag at 0630 hours. This is a violation of 9CFR 416.1, 416.4(b), and your SPS Program #8.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
