Violation: 416.3(a), 416.4(a)

Citation: At approximately 0435 hours, while performing SSOP review and observation procedure at establishment 01015-P, I observed the turkey salt dip tanks had previous day's production residue floating in the water and black grease liked substance sticking to the inside sides and the inside bottom of the tanks. The sizes varied and too numerous to count. No tag was applied as I remained in the area. Mr. (Sanitation Foreman) was immediately notified of the noncompliance. Plant management elected to drain both dip tanks. This is the violation of 9 CFR 416.4 (a), 416.3(a), and the plant's own SSOP plan, SSOP # 1. Upon reviewing the preoperational records, I observed Quality Assurance technician had chosen the dip tanks and found them acceptable.

Regulation:

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
