Citation: At approximately 2325 hrs. I entered the second processing area. I noticed there was a heavy fog created by the sanitation department. It appeared to be in the entire second processing area. I proceeded to the ground turkey operations area. The fog was not present in the ground turkey area, but the affects of cleaning in close proximity were evident. The following noncompliance was noticed: heavy beaded condensate on several of the pipes, and the underside of the drip pan attached to a cooling unit. The pipes and the drip pan are located directly above the ground turkey line where the product is exposed prior to entering the process that over wraps the product in the consumer tray. I did not observe any condensate drip onto the exposed product, therefore I did not take reulatory control of the product. I reviewed the Q.A. operational sanitation checks. At 2156 hrs. all categories were noted acceptable. I notified (Second Processing Boning Supervisor) of the noncompliance. This is a direct violation of 9 CFR 416.1, 416.4(d)

Regulation:

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
