Violation: 416.4(a), 416.4(b)

Citation: At approximately 0435, while performing preoperational sanitation after plant's release to USDA, I found the following noncompliances in 2nd processing: 1. At the turkey chiller, I observed that the belt had several UFM's on the surface, also the edge of the belt had black grease that encompassed the whole length of the belt. 2. At the exit of the turkey chiller, I observed product residue (fat, meat) on the backside of the chute and the wall area directly below the chute. The pieces of product residue were to numerous to count and ranged from 1/16" to 1/2" in size. The above mentioned are nonproduct contact surfaces except for the belt surface. These units were cleaned in my presence. 3. The linco line shackles had product residue (fat) on the black plastic pieces that are connected to the rail. The shackles having residue were to numerous to count. I tagged the linco line shackles at 0440 with US reject tag #B37853301. After cleaning I released the unit at 0510. Mr. was informed of all the above noncompliances. The above are a violation of 9CFR 416.4 (a) & (b) and your own SSOP Plan. At approximately 0316 hours, while CSI was performing preoperational sanitation after plant's release to USDA, I found the following noncompliances in first processing area. 1) The Rabbi's cabinet in the Knife Room had used cups and paper towels throughout the entire cabinet. The shelves inside the cabinet had blood on them. The cabinet was tagged with U.S> Reject tag #B37853065. 2) The maestro had previous day's production residue on the support beams and the inside wash cabinet had chicken fat, blood and feathers inside it. 3) The tray cleaner at the end of the Meyn Line had an intestine wrapped around the wheels on it. The approximately size was 3 to 4 inches long. Mr. was shown the areas that were noncompliances. The above were a violation of 9CFR 416.4(b) and your SSOP Plan.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
