Violation: 416.2(b)(1), 416.2(e)(3), 416.4(b)

Citation: The following non-compliances were observed in the evisceration and chilling areas this morning at approximately 8:15 am, while performing a sanitation performance standards inspection: Two cement columns between the turkey soaker and chicken evisceration line exhibit cracked and flaking cement along the ceiling joint and extending away from the columns several feet. Water lines attached to the columns have excessive build-up of unidentifiable foreign material (ufm) which has a thick, greasy consistancy. Several of the joints of these lines are dripping and in need of repair. (Reference 9 CFR 416.2(b)(1) and 416.2(e)(3)) White insulated overhead pipes running parallel to the turkey soaker and over the final washer and trim stations of the chicken evisceration line have black build-up covering the top surfaces, and one vapor light in the same general area has black residues covering the top surfaces. (Reference 9 CFR 416.4(b)) The records associated with the plants program, SPS 9A Master Cleaning Schedule, documents that these items were cleaned, inspected, and verified during the previous week ending 11/04/2011. Also during the inspection, the turkey salt rinse line rails were observed to have rusty residues on those portions leading up to and down from the chiller drop area.(Reference 9 CFR 416.4(b)) All items were discussed with and shown to at about 9:00 am today.

Regulation:

416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(e)(3) Prevent adulteration of product, water supplies, equipment, and utensils and prevent the creation of insanitary conditions throughout the establishment;

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
