Citation: While performing a slaughter HACCP task in the chicken evisceration department today at about 11:20 am, the following HACCP failure was observed: The On-Line Reprocessing cabinet for the chicken evisceration line was not operating during operations at 11:20 am. I stopped the line and notified QA ( and the evisceration supervisor ( The records documenting the monitoring of CCP [redacted] show that the last acceptable check was performed at about 10:04 am, but a visual observation performed by a QA technician ( verified that the cabinet was operating properly at 11:11 am. No official control actions were required as the plant superintendent for 1st processing () verbally notified me of the plants' corrective actions, which were taken in my presence. This non-compliance is a deviation from the critical limit in that although the limits of the chemical were adequate, it was not applied to the carcasses as required to fulfill the plants HACCP plan.


381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
