Violation: 381.76(b)

Citation: The results of presentation tests by inspection personnel on the Meyn Maestro chicken evisceration line this morning at about 11:20 am exceeded the process control limits of less than or equal to 24 total nonconformance weight and less than or equal to 2 occurrences of one error, requiring correction and retesting. Both QA ( and management ( were informed. Retesting by QA exceeded the process control conformance levels for retesting, resulting in a line reduction. Further testing by QA met the process control conformance levels, allowing for a return to normal line speed. The requirements of parts 381.76(b)(3)(ii)(a) and 381.76.(b)(3)(iii)(b) of 9 CFR were not met. A similar occurrence was documented on NR # ARE3811013109N/1, dated 01/09/2012. The further planned actions in the response include notification of the growout department to investigate some unknown feed issues resulting in proventriculitis. Their response continues by stating “We will continue to monitor this and try to give adequate notice and extended out of feed time in an effort to prevent this problem from occurring again.”


381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
