Citation: At approximately 0440 hours today while I was walking through the evisceration department performing Operational SSOP Review and Observation I observed two pieces of fat laying on the water in the chickens soaker I check the soaker from the right side and from the middle I found grease in multiple places on the food contact surfaces and non contact surfaces at several places in sizes of several square inches each. Also observed, there were fat and grease residues, black in color, on multiple surfaces of the framework bars, both in and above the water surface, including the entry areas of the soaker. I took regulatory control action (RCA) by stopping the chicken line immediately, informing and showing the evisceration supervisor, and tagging the chiller with tag # B33378131. I also informed and showed the Assistant Plant Manager. The establishment initiated corrective actions. I inspected the soaker after the plant completed their corrective actions, found it acceptable, and released the unit at 0622 hours .The establishment failed to comply with 9 CFR416.13(c) , 9CFR 416.4(a,b,d).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
