Violation: 381.76(b)

Citation: The results of presentation tests by inspection personnel on the Meyn Maestro chicken evisceration line this morning at 0618 exceeded the process control upper limit of more than 40 points, which resulted in an immediate line reduction of 10 percent. Both QA ( and management ) were informed. Further testing by QA resulted in a return to normal line speed. The requirements of parts 381.76(b)(3)(ii)(a) and 381.76(b)(3)(iii)(b) of 9 CFR were not met. A similar occurrence was documented on NR # ARE2704014412N/1, dated 01/12/2012. The further planned actions in the response state in part "Grow out was notified with the information concerning proventriculitis to continue their search into why we continue to experience this issue..." Failure to initiate effective corrective actions and preventative measures could result in additional regulatory and/or administrative action. You are hereby advised of your right to appeal this decision as delineated by 381.35 of 9 CFR.


381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
