Citation: On 02/29/2012, at approximately 0335 hours while I was performing Pre-Op SSOP Review and Observation in the Evisceration department, after the plants pre-operational sanitization inspection and prior to the start of operations and observed the following non-compliances: The vent cutter and opening cut machines had multiple spots with grease, white in color in sizes of about 1/16 inch up to several square inches each, along with some feathers. I took regulatory control action by tagging the vent cutter with tag #B36475442 and the opening cut machine with tag #B18891762, and informing Mr. The Sanitation Manager. After the plants corrective actions, I re-inspected both machines, which were found to be acceptable, and released them at 0410 hours. Also during my inspection in the picking room, I observed multiple plastic splash shields on the pickers with numerous black greasy ufm residues/build up on non-product contact surfaces. I showed this non-compliance to The plant SSOP record was not yet available, but I was informed verbally by QA, that the areas were ready for production. The requirements of parts 416.13(c).416.4(a).416.4(b) of 9 CFR were not met. All deficiencies were from a previous days operation. A similar occurrence was documented as noted in block 6a of this NR. Failure to initiate effective corrective actions and preventative measures could result in additional regulatory and/or administrative actions. You are hereby advised of your right to appeal this decision as delineated by 381.35 of 9 CFR.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
