Citation: On 04/19/2012, at approximately 0530 while I was performing a Poultry Zero Tolerance Verification test on the turkey line, I found one of ten randomly selected birds contaminated with fecal material.   The fecal material was on the outside area of the left wing of the bird. It was green in color, solid in consistency, and approximately one quarter inch in size. I took regulatory control action by stopping the turkey line immediately, informed and showed Mr. the Assistant Plant Manager and Mr. (turkey evisceration supervisor). The establishment started corrective actions. This noncompliance is a failure to comply with the following regulations: 9 CFR 417.2(c) (4), and 9 CFR381.65 (e).  A similar occurrence was documented on NR ARE2811014118N/1 on 01/18/2012. Corrective and preventive actions were either ineffective, or not properly applied as demonstrated by todays regulatory and HACCP non-compliance. Failure to initiate effective corrective actions and preventative measures could result in additional regulatory and/or administrative actions. Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
