Violation: 416.4(b)

Citation: At  0335 while performing preoperational sanitation, I observed the following SPS noncompliances in second processing: 1.)  The exit belt located at the turkey chiller had product residue (fat) on the underside of the belt.  The residue was located at the cog wheel closest to the wall.  There were numerous pieces in sizes varying from 1/2" to 1 1/2".  Item was tagged with U.S. rejected tag number B19169302.  I was notified at 0341 to reinspect item.  At that time I still observed product residue in the same location.  After sanitation employees cleaned the item again I released the equipment at 0354.  2.)  At 0351, at the turkey debone line, the framework that the drive motor sets on was found to have a black build up, rust, and fat.  Item was cleaned in my presence and released at 0356.  I notified of the above noncompliances.  This is a violation of 9 CFR 416.4(b) and your SPS plan. A similar occurrence was documented 05/10/12, the proposed further plan actions were not properly applied or ineffective as demostrated by todays noncompliance.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
