Citation: While I was performing preoperational sanitation inspection, after the plant performed their SSOP monitoring for preoperational sanitation inspection, the following facilities based noncompliances were observed in the second processing area this morning at 3:10 am.[newline]At the product exit area of the freezer for producing individually frozen poultry parts, several areas of the stainless steel chute used to guide the parts onto a conveyor was observed with broken welds and a jagged tear extending several inches near the top right corner. Above the freezer exit opening, white insulated piping is covered with clear plastic and tape. The tape and plastic are deteriorating with black and green mold or mildew like residues at various points. Also, the white plastic drive cog wheels at the end or return point of the conveyor, which takes the individually frozen product parts from the freezer to additional conveyors, are deteriorating and exhibit peeling plastic. I notified and showed Sanitation Manager, my findings at that time.[newline]A shrink wrapping unit partially covered with a tarp at the thigh deboning table had black and brown greasy residues along with product residues on the interior surfaces, under and along the sides of the mesh conveyor inside the unit. I notified that the unit was rejected, US Reject tag # B37852527 applied, at 3:30 am.[newline]The requirements of parts 416.3(a) and 416.4(b) of 9 CFR were not met.
416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
