Citation: At approximately 2315 hrs., I observed the following noncompliance in the evisceration department while performing the review and observation component for the 01C02 procedure. At the south end of the department I observed both rehang belts filled to capacity with some chicken carcasses falling on to the floor. I saw a plant employee recover some of the chicken carcasses from the floor and throw them into a white barrel, used for one leggers, without reconditioning them first. I immediately retained the white barrel of chicken carcasses with U.S. tag #B39801912 and notified evisceration lead of the noncompliance. After the chicken carcasses were reconditioned and the white barrel was cleaned and sanitized I removed my tag from the barrel. After a review of the plants SSOP records for the evisceration department, no deficiencies were documented prior to my observation of the noncompliance. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
